Fluff or Frozen?

Every morning for the last few years, Mary Jane would call the Cafe to find out what “congealed salads” we had available. Ms. Betty Joyce didn’t want anyone to know that Mary Jane was calling for her, so when Mary Jane would call back with an order, we would all pretend like we didn’t know what was going on. When she would come by to pick up her order, we would wink and smile as we said, “If you see Ms. Betty Joyce, tell her we said hello!” Ms. Betty Joyce passed away recently, and we thought we would honor her memory by sharing about congealed salads.

Congealed salads are very popular in the south, and while they have similar main ingredients, they can be very diverse in flavor and texture. Some are frozen, reminding one of ice cream.  Some are fluffy thus, referred to as “fluff”. Some are truly congealed using flavored gelatin. Most congealed salads contain whipped topping, flavored gelatin or instant pudding, and fruit. By adding other ingredients, such as cream cheese, cottage cheese, or coconut, the flavor and texture can be changed. Also, the way the gelatin or pudding is mixed in can determine the outcome of the salad. 

Our Cafe serves a different frozen salad and fluff each day. Frozen strawberry salad and orange fluff are the most popular. Sometimes, people count their congealed salad as dessert, but others just call it a side. However you decide to serve it, the cool creamy deliciousness is a southern treat, perfect for any summer get-together!

Orange Fluff

1 small package Jell-o brand orange gelatin
16 oz. Cool Whip brand whipped topping
1/2 cup cottage cheese
1/4 cup shredded coconut
15 oz. can mandarin oranges, drained

Mix gelatin with whipped topping. Add cottage cheese and coconut. Fold in oranges. Refrigerate before serving.

A Southern Sunday dinner would not be complete without one of these delicious dishes. At our house, Mama made "pink, orange, or fruit" salad... Oh, how I wish I had gotten her to write these recipes out in her own hand! They are definitely food for the heart!
