
Italian Sausage & Tortellini Soup is one of those recipes I can count on when I don’t have time to cook or when we need comfort food fast. I jotted down the recipe while watching 30-Minute Meals with Rachel Ray on Food Network - I really wasn’t sure if I got the recipe correct, as it seemed too simple, and I was also juggling a newborn and a 2 1/2-year-old at the time. Turns out, it was right for us! I’ve even brought the recipe into our Cafe soup lineup with rave reviews.
The recipe for Italian Sausage & Tortellini Soup is very basic, but you can add to it very easily. I like to add spinach when I don’t feel like making a side to go with the soup, but know we need some veggies. Really, you could add any vegetables your family enjoys. Also, try using spicy Italian Sausage or different types of tortellini to create different flavors. The important thing is to use fresh or frozen tortellini. I’ve tried to be cheap and use dried tortellini, but it does not work out as well because they fall apart and become very chewy.
